I love following Eat Yourself Skinny she shares some great tips and of course yummy recipes that take it easy on your waistline.  Who doens't LOVE Macaroni & Cheese?  Well she has a recipe for you and it's lightened up, creamy and delish for the whole family.

I tend to like recipes and food that can be prepared ahead of time and then just popped in oven when it's time to get ready for dinner, so here is another one!

Here are your ingredients:
Recipe adapted from Cooking Light

3 cups cubed peeled butternut squash
1 1/4 cups fat-free, lower sodium chicken broth
1 1/2 cups fat-free milk
2 garlic cloves, minced
2 Tbsp plain fat-free Greek yogurt
1 tsp. salt
1/2 tsp. black pepper
1 cup shredded Gruyere cheese
1 cup grated pecorino Romano cheese
1 box (1 lb) uncooked elbow noodles
1/2 cup whole wheat panko breadcrumbs
Fresh parsley, garnish as desired
