A Monday Madness Meal With An Inspiring M.O.M

In true M.O.M fashion, Kelly Smith is a mom of 3 girls, owner of The Polka Dot Crab and teaches our future pediatric nurses 12 hours a week. Which definitely shows she is a Master Of Multitasking. I think you will find one of her family’s favorite recipes a yummy meal the whole family can enjoy and a HUGE time saver on a busy day.

See what a typical Monday for Kelly is these days (in addition to breakfast and getting ready for school): “Mia has dance at 9:30, Ella dance at 4, and then Ella & Mia have swimming lessons at 6 and a Mommy & Me class for Penelope at 6...” then she is home to eat and work, so at naptime this is a great time to set this meal up for dinner later on!

Whether your kids nap at noon or at 2pm, this is sure be ready all on its own and in time to sit at the table any day of the week, not just on the madness of a Monday, so enjoy:

Slow Cooker Country Captain Chicken w/Rice

2cup shitake mushrooms

1/2 cup celery, chopped

1 cup onion, chopped

1 med garlic clove, minced

1 lb boneless, skinless chicken thighs

1Tbsp flour

1/4 cup fat-free chicken broth

1 1/2 tsp curry powder ( may be decreased)

1 tsp salt

1/4 tsp balck pepper

1/4 tsp paprika

3Cup canned crushed tomatoes

1/4 cup golden raisins ( may be left out too)

2 Cups brown rice

Coat large skillet w/cooking spray

Add mushrooms, onion, celery & garlic and saute until soft.

Place veggies in crock and add chicken



In a cup stir flour & chicken broth until smooth, add to crock.

Add curry powder, salt, pepper, paprika, crushed tomatoes & raisins and stir

Cover and cook on low for 5 hours

Serve over rice

tields 2 1/2 cups chicken mixture & 1/2 cup rice
